Light Chicken Salad Sandwich

Short on time? This chicken salad swaps mayo for Greek yogurt — lighter, but still creamy — and comes together in about 10 minutes.
Better yet, it starts with leftover rotisserie chicken, so there’s no cooking involved. Here’s everything you need.
Makes 4 sandwiches · Prep: ~10 minutes

Ingredients
- 2 cups leftover rotisserie chicken, chopped
- 1/2 cup diced red onion (or less, to taste)
- 1/2 cup diced apple
- 1/2 cup grapes, halved
- 1/4 cup dried cranberries
- 1/4 cup slivered almonds
- 1/2 cup plain Greek yogurt
- 1 tablespoon freshly squeezed lemon juice, plus more to taste
- 1/2 teaspoon garlic powder
- Kosher salt and freshly ground black pepper
- 8 slices bread
- 4 leaves Boston bibb lettuce
Directions
- In a large bowl, combine the chicken, red onion, apple, grapes, cranberries, almonds, Greek yogurt, lemon juice and garlic powder.
- Season with salt and pepper, then taste and adjust the lemon juice and seasoning as needed.
- Divide the chicken mixture among 4 slices of bread, top each with a lettuce leaf, and close the sandwiches with the remaining bread.
That’s it — a fresh, protein-packed lunch in about the time it takes to set the table.
