But don't just get up and make a quick trip to the salad bar, sandwich joint, or taco truck. Instead, bring something homemade with you like this Pea, Mint, and Avocado Soup. It's light and fresh yet absolutely satisfying that you'll want to eat it every day!


This refreshing soup is that it's a meal prepper's dream come true. With just a handful of ingredients and 20 minutes, you can whip a big batch of this on the weekend and pack it in small containers to bring with you for a quick and healthy weekday meal.


The best part about it? It's full of healthy fats form the avocados and it's only about 200 calories per serving. That's a win in our book!

Pea, Mint, & Avocado Soup Recipe


Ingredients:


  • 200g of frozen peas
  • 1 avocado
  • A handful of fresh mint
  • 1 1/2 pints vegetables stock
  • Salt & Pepper


 Method:


  1. Pour the peas and water into a pan, and simmer for 3 minutes, with the stock cube.
  2. Slice the avocado, and add to a food blender.
  3. To the blender add the peas, salt & pepper and fresh mint. Blend for a minute.
  4. Top with peas, mint, and sliced chilli for a bit of heat.


Notes:


You can store single servings of this soup in air-tight containers in the fridge for up to three days. You can also freeze it for up to month and simple thaw and heat it up in the microwave for a minute or so.
